On the hills of Gubbio, in Upper Umbria, the Consorzio per la Biodiversità dell’Olivo e dell’Olio (Consortium for Olive and Olive Oil Biodiversity) was born—an initiative aimed at protecting and enhancing the agricultural, genetic, and cultural heritage of the territory. Founded by the local custodian farmer Silvano Di Murro from Gubbio alongside Pierfrancesco Saladino from Amelia, the Consortium brings together producers, farmers, and institutions to save historic olive varieties from extinction while promoting a model of sustainable agriculture and slow tourism.
The heart of the project lies in the recovery of historic local cultivars brought back from extinction, such as Borgiona, Tonda Gentile, Limona with its citrus notes, Raio with its high polyphenol content, and the resilient Coroncina.
From this vision, the Azienda Agricola Di Murro produces two main lines: on one hand, Monovarietal Oils extracted in purity from native varieties saved from extinction, and on the other, organic high-altitude selections that include the commercial line Olio Di Murro EVO and Olio dei Monti—the latter offered both as a monovarietal version and in refined signature blends.
