Nociata is a typical dessert of Lazio but it is very common also in Umbria. It is prepared with walnut kernels and honey wrapped in bay leaves. To cook it, boil the honey in a moderate flame and then dip the finely chopped walnuts into it. The bay leaves give the dish a very pleasant aroma, moreover they make the presentation of the Nociata aesthetically unusual and original, different from the classic desserts.
