
In the heart of the Umbrian hills, near Perugia, Frantoio Caporali is the place where the history of a family intertwines with the excellence of a high-quality oil, Olio EVO 333. This product is the result of a vision that combines a deep respect for tradition with an innovative spirit, embodied by the owners who have chosen to dedicate their lives to this “green gold”. Frantoio Caporali is deeply connected to the “Il Castellaro” estate, a place rich in history purchased in 1987 by the father of the Caporali family. For years, oil was a sideline, however, the dedication to quality was already a seed planted: in 2011, the family built a private mill to have full control over the entire production chain, guaranteeing freshness and the highest quality of their product. The real change came with the new generation. The pandemic represented a turning point that pushed Paolo and Itziara to make a radical life choice: leaving behind careers they had launched abroad, in sectors such as international communications and design craftsmanship, to move to Umbria and dedicate themselves entirely to the estate. This decision marked the beginning of a new phase: transforming the “Castellaro” oil, once a company Christmas gift, into a brand with a precise identity and a modern commercial vision. Thus was born the EVO 333 oil, a name that encapsulates their philosophy: three cultivars (Moraiolo, Frantoio, and Leccino), 30 hectares of olive groves, and a 3000 kg per hour olive mill (which will soon be expanded, but always in multiples of three).
The current management is guided by a practical and deeply personal approach; theirs is an artisanal philosophy, where manual care and attention to each individual plant are fundamental. Passion combines with expertise: the family also boasts among its members an oil sommelier with technical training in the oil mill, guaranteeing an excellent product. Today, Frantoio Caporali is not just a place of production, but a constantly evolving project. The owners are investing in the future with the construction of a larger mill and the planting of 1,500 new plants. Their greatest ambition, however, is to “educate” about oil. They plan to create an educational park with ancestral crops and training courses for schools, with the aim of instilling awareness among children of the value of this “green gold” and the importance of a quality diet. The Caporali family’s story unites the roots of Umbrian tradition with an innovative and open vision, where oil is not just a product, but the center of a life project.
