Passatelli is a unique type of pasta that is quite simple to prepare. For delicious passatelli, beat eggs in a bowl, add salt and pepper, gradually adding all of the ingredients. The mixture must be kneaded until it becomes well-blended and firm. A special “passatelli” making tool is sold in food shops that is used for cutting the tiny 4-5 cm cylinders (a potato masher can also be used). This pasta is served exclusively in boiling hot meat broth and once they are placed into the pot stir gently then remove from the flame as soon as they rise to the surface. A wonderful wintertime dish to be served as an alternative to pasta.
