This salami is a typical Umbrian cold cut of small or medium dimensions, it is used in the preparation of starters or as a filling for sumptuous sandwiches. It is prepared according to traditional recipes. The name derives from the coral red colour of the meat mixture. The more prized cuts of pork are used in its preparation.
