During your visit, you’ll have the opportunity to discover the indigenous Dolce Agogia olive variety and delve into the meticulous production phases that transform these olives into a premium product. Guided tastings are also available, allowing you to truly appreciate the unique aromatic nuances of their oils.
The cooperative’s sales point offers more than just their prized EVO (Extra Virgin Olive Oil). You’ll also find an array of other local gastronomic delights, such as the Slow Food Presidium Trasimeno tiny beans (fagiolina), saffron, wines, beers, jams, and legumes—all produced by the members and fellow cooperatives in Umbria and Tuscany.
The mill itself boasts cutting-edge technology that optimizes olive processing while adhering to traditional and eco-conscious practices. Low water consumption machinery, renewable energy utilization, and comprehensive wastewater and waste material recycling are just a few examples of their commitment to sustainability.
