Polpette di daino con crema di sedano rapa e trombette dei morti \u2013 Una ricetta dell\u2019EVOO Ambassador chef\u00a0 Paolo Trippini di Civitella del Lago, Baschi (Tr).<\/em><em>\u00a0Per consultare la lista dei 32 i ristoranti aderenti:<a href=\"http:\/\/www.stradaoliodopumbria.it\/ristoranti-evoo-ambassadors\/\">\u00a0www.stradaoliodopumbria.it<\/a><\/em><\/h3>\n<h3>Ingredienti per la pasta all\u2019uovo<\/h3>\n<p>300 g di farina bianca \u00b7 200 g di semola di grano duro \u00b7 5 uova.<\/p>\n<h3>Ingredienti per il rag\u00f9 di oca<\/h3>\n<p>1 oca \u00b7 50 g di sedano \u00b7 50 g di carota \u00b7 50 g di cipolla \u00b7 1 spicchio d\u2019aglio \u00b7 1 rametto di rosmarino \u00b7 1 dl di vino bianco \u00b7 2 dl di brodo vegetale.<\/p>\n<h3>Ingredienti per l\u2019emulsione agli agrumi<\/h3>\n<p>150 ml di olio extra vergine d\u2019oliva \u00b7 1 limone \u00b7 1 arancia.<\/p>\n<p>&nbsp;<\/p>\n<hr \/>\n<h3>PROCEDIMENTO:<\/h3>\n<p>Mettere le farine a fontana, aggiungere al centro le uova e amalgamare il tutto lavorando l\u2019impasto fino a che non risulta liscio e omogeneo. Successivamente metterlo a riposare per 30 minuti in frigorifero; poi stendere e ricavarne i tagliolini. Disossare l\u2019oca privandola della pelle. Tagliare la carne al coltello ricavandone un rag\u00f9. Successivamente far sudare in casseruola la pelle cos\u00ec da tirare fuori il grasso e aggiungere sedano, carota, cipolla tritata, aglio e rosmarino; una volta appassite, aggiungere la carne tagliata e le ossa. Far rosolare il tutto, aggiustare di sale e pepe e sfumare con del vino bianco. Far cuocere almeno un\u2019ora a fuoco lento aggiungendo, quando ce n\u2019\u00e8 bisogno, del brodo vegetale.<br \/>\nSbollentare le bucce degli agrumi una volta che sono state private della parte bianca. Aggiungere la polpa e frullare il tutto emulsionando con abbondante olio extravergine d\u2019oliva.<br \/>\nCuocere la pasta in abbondante acqua salata e poi saltarla in padella con il rag\u00f9 di oca mantecando con olio extravergine d\u2019oliva.
