Lasciar riposare in frigo per 2 ore.<\/p>\n<hr \/>\n<h4><strong>Ingredienti per il flan di ricotta:<\/strong><\/h4>\n<ul>\n<li>400 g di ricotta di pecora<\/li>\n<li>300 g di panna<\/li>\n<li>160 g di zucchero semolato<\/li>\n<li>240 g di tuorli<\/li>\n<li>1 bacca di vaniglia<\/li>\n<li>150 g di farro cotto<\/li>\n<\/ul>\n<p><strong>Preparazione<\/strong><\/p>\n<p>Montare i tuorli con lo zucchero. Scaldare la panna a 65\u00b0 C e unire la ricotta. Frullare il tutto fino a ottenere una crema liscia. Unire le uova montate, il farro cotto e gli aromi; colare negli stampi o sul piatto e cuocere a vapore a 86\u00b0 C per 20 minuti.<\/p>\n<hr \/>\n<h4><strong>Ingredienti per il gelato all\u2019olio<\/strong><\/h4>\n<ul>\n<li>70 g d\u2019acqua<\/li>\n<li>150 g di panna<\/li>\n<li>200 g di glucosio<\/li>\n<li>75 g di tuorli<\/li>\n<li>150 g di olio extravergine d\u2019oliva<\/li>\n<\/ul>\n<p><strong>Preparazione<\/strong><\/p>\n<p>Unire tutti i liquidi compreso il glucosio e arrivare a una temperatura di 82\u00b0 C.
